Cheesecake
- 8 ounces crushed cookies (I used about less than half digestive pack)
- 1/2 cup melted butter (I cut about 2cm butter)
- 2 tablespoons cornstarch (I used 3/4 tbsp)
- 2 tablespoons lemon juice (I squeezed about same amt as above)
- 1 vanilla pod (I used splash of vanilla extract)
- 3 (8-ounce- 226 ish g) packages cream cheese (I used 250g)
- 3/4 cup sugar (I used 1/4 cup caster sugar)
- 2 eggs (I used 1 egg)
- 3/4 cup heavy cream (I used 1/4)
- 1 tablespoon grated lemon peel (omitted)
- Mix the crushed cookies with the butter. Spread over the bottom of a springform pan.
- Mix the cornstarch with the lemon juice.
- Slice the vanilla pod along its length and remove the seeds.
- In a bowl, place the cream cheese, sugar, eggs, heavy cream, vanilla, melted butter, grated lemon and the cornstarch dissolved in lemon juice. Mix and pour the mixture into the pan.
- Bake at 300/ 150C degrees for 50 minutes. Turn off the oven and let the cake cool inside. (I baked for 40 mins)
Air fryer- 130 for half hour
- Cool in the fridge for 4 hours before serving.
