Week 4:

Intro protein and dinner too. Eg. chicken and sweet p p, chicken w carrot, salmon and sweet p, cod and corn

1 pot chicken 

1 tbsp sunflower oil

50 g chopped onion
100 g chicken breast, cut into chunks
1 medium carrot, peeled & sliced (approx 60g)
300 g sweet potato, peeled & chopped
1 small apple, peeled & chopped
200 ml unsalted chicken stock
40 g frozen peas
Method
  1. Heat the oil in a saucepan and sauté the onion for 3-4 minuted until softened
  2. Add the chicken to the pan and sauté for 3-4 mintues
  3. Add the carrot, sweet potato and apple, pour over the stock and bring to the boil
  4. Simmer, covered with a lid, for about 12 minutes or until the chicken is cooked through and the vegetables are tender
  5. Add the frozen peas and simmer for a further 3 minutes
  6. Purée in a blender to the desired consistency

Cheesy cod: 

  • sweet potato 225g, peeled and cut into chunks
  • cod fillet 75g
  • milk 30ml
  • cheese 50g, grated
  • Butter 1 knob

Method

  • STEP 1

    Steam the sweet potato, or pop it in a pan of water, bring to the boil then simmer, for about 10 minutes or until soft.

  • STEP 2

    Meanwhile put the fish in a microwave-safe dish, add the milk, dot the butter on top and cover. Microwave on high for about 2 minutes until cooked. Alternatively, poach the fish in a saucepan with the milk and butter for about 6 to 7 minutes.

  • STEP 3

    Mix together the fish (including the milk it’s poached in), sweet potato and cheese, then purée until smooth.
